Satay Chicken

Ingredients:

  1. 1 kg chicken thighs with legs, cut into bite-sized pieces
  2. 2 tablespoons soy sauce
  3. 2 tablespoons honey
  4. 2 tablespoons vegetable oil
  5. 1 teaspoon turmeric powder
  6. 1 teaspoon coriander powder
  7. 1 teaspoon cumin powder
  8. 2 cloves garlic, minced
  9. 1 tablespoon lemongrass, minced (optional)
  10. Wooden skewers, soaked in water for at least 30 minutes

    Instructions:

    For the Chicken:

    1. In a bowl, mix soy sauce, honey, vegetable oil, turmeric powder, coriander powder, cumin powder, minced garlic, and lemongrass (if using).
    2. Add the chicken pieces to the marinade, ensuring they are well-coated. Marinate for at least 2 hours or overnight for best results.
    3. Thread the marinated chicken pieces onto the soaked wooden skewers.
    4. Preheat the grill or barbecue to medium-high heat.
    5. Grill the chicken skewers for 8-10 minutes, turning occasionally, until they are cooked through and have a nice char.

      1. Arrange the grilled chicken satay on a serving platter.
      2. Serve with the prepared peanut sauce on the side or drizzled over the skewers.
      3. Garnish with chopped cilantro and sliced cucumbers if desired.
