Mango Sticky Rice

Mango Sticky Rice is a Popular Thai dessert food

Ingredients:

For the Sticky Rice:

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt

For the Topping:

  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds (optional, for garnish)
  • Mint leaves (optional, for garnish)

For the Coconut Sauce:

  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt

Instructions:

  1. Prepare the Sticky Rice:

    • Rinse the glutinous rice under cold water until the water runs clear.
    • Soak the rice in water for at least 4 hours or overnight.
  2. Steam the Sticky Rice:

    • Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel.
    • Steam the rice for 25-30 minutes or until it becomes translucent and sticky.
  3. Prepare the Coconut Sauce:

    • In a saucepan, combine the coconut milk, sugar, and salt for the coconut sauce.
    • Heat over medium heat, stirring until the sugar dissolves. Do not let it boil. Once done, set aside.
  4. Mix the Sticky Rice with Coconut Sauce:

    • In a bowl, combine the steamed sticky rice with coconut milk, sugar, and salt. Mix well until the rice is evenly coated.
  5. Assemble the Mango Sticky Rice:

    • Arrange a portion of the sweetened sticky rice on a plate or in a bowl.
    • Top the rice with sliced mangoes.
  6. Drizzle with Coconut Sauce:

    • Pour the coconut sauce over the mango and sticky rice.
  7. Garnish and Serve:

    • Optionally, garnish with sesame seeds and mint leaves for added texture and freshness.
  8. Enjoy:

    • Serve the Mango Sticky Rice warm or at room temperature. The combination of the sweet, sticky rice, creamy coconut sauce, and fresh mango is delightful.
